Spring dandelion leaves salad

When is (slowly) getting warmer outside a nice walk in the nature is a must! After that spring dandelion leaves salad is very satisfying. It is an old fashion meal, but to me some things never get out of style 😉 It is just beyond the heaven! Very healthy, rich in minerals and fibers. Will regenerate you after long cold winter. Sorry, only pros and no cons this time 🙂

My grandparents lived in Germany during the second world war for couple years. As they were starving vitamins, ladies went gathering the spring dandelion leaves for their families. When owner saw that he start screaming that grass there is for his caws to eat not for humans. Do they think they are animals or what!? 🙂 Obviously he never heard about that tasty salad 🙂 I was told that story by my grandma million times but it’s still funny to me 🙂 Wish she was still with us…

  3. What a story the memory from your Grandmother is! I remember to collect dandelion as a child – in our garden behind the house.

    1. Thanks, your mum’s story with oranges reminded me on that, thank you!
      As a child I preferred when they gets white 🙂

    1. Actually that was the first kind of snowdrops I ever knew, we have plenty of them 🙂 Google says these are ‘leucojum vernum’ or spring snowflakes in English.

  5. Delish and so pretty! I remember dandelion greens being so terribly bitter, but maybe not if properly dressed and combined with other ingredients? Looks deliciously healthy after the Easter feasting 🙂

    1. Liz thank you! Warm or rather hot potatoes do half of the work in this case. I love salads, but that one is ‘my queen’ 😉 Like you said, especially after feasting 😉 Happy Easter to you too!!

  6. Yum – salad! Love it! Was going to ask if the posies are snowdrops, but I see someone beat me to it. I really had no idea, but the name just came to me. They are very pretty. I’m learning to keep ceci beans (garbanzos) cooked up and in the refrigerator at all times. So good in salads!

    1. Thank you 😉 I only use chicken eggs to cook and quail eggs to decorate. But feel free to use any kind you like for that salad!

  12. This is a beautiful salad. I love dandelion greens. I just saw a lovely bunch at the market the other day. I think I will go back and get them and make this. The combination of potato and egg seems like it may tame the bitterness a little. Your pictures are so well done! Thank you for the recipe!

    1. Thank you! You should go 😉 Dandelion leaves aren’t that bitter before they bloom. Combination of warm potatoes, eggs and baked ham do a good job and makes a wonderful salad! You prepared it any other way before?

    1. I guess you are asking about little dottie one – these are quail eggs. Dandelion is such interesting plant, you can also use the yellow blums to prepare wine! As a kid I loved seeds flying like umbrellas too 😉
