Milky rice pudding

My mum often prepared milk rice with cinnamon or cacao for breakfast or easy dinner. For us, kids of course. My brother and I loved it.

1 cup white rice
3 cups almond milk
2 table spoons sugar
1 tea-spoon vanilla sugar
1 tea-spoon cinnamon powder or cacao

Cook rice in salted milk till soft. Mix sugar and vanilla  sugar in it. Fill small cups with it and sprinkle cinnamon or cacao powder over the top.

  7. I have such good memories of mum covering the leftover rice with milk after dinner and then making rice pudding for breakfast the next morning. She used to add coconut, vanilla and raisins, which was a lovely flavour combination.

    1. Thank you Alex, you are too kind! I see no reason why you shouldn’t. You’ll might need more milk as in recipe and more time to cook. It is actually nice idea, I try it next time!
