Cinnamon rolls

As first I have to say I don’t like cinnamon. I LOVE spices and herbs but not that one! But from time to time I try something that I am usually avoiding. In is incredible how many times I was wrong 😀


So this time I tried Cinnamon rolls. Here is the recipe:

2 spoons coconut butter
2 spoons agave
1/5 L almond milk
20 g yeast
1/2 cup sugar
2 and 1/2 cup flour (white and rye)

1 tbsp corn flour

1 spoon Nescafe

1 lemon yeast

Mix agave, almond milk and melted coconut butter in a small cup.

In a large mixing bowl combine all ‘dry’ ingredients. Add liquid mixture,  and water if needed. Beat well. When the dough has just pulled together turn it out onto a floured surface. Knead it until smooth, about 5 minutes at least.


1 tbsp coconut butter
2 spoons cinnamon powder
3 spoons sugar (large crystals)
5 spoons nuts, cropped

Roll out dough into a rectangle, 1 cm thin. Spread melted coconut butter all over it, sprinkle with cinnamon, sugar and nuts and roll it up. Cut in 2 cm equal size rolls. Each of them twist couple times. Cover and let rise until doubled – that will take you about 30 minutes. Bake in the preheated oven for about 30 minutes or until is browned.
